Vegetarian lasagna, filled with a variety of delicious vegetables, is a wonderful option to the classic meat sauce lasagna, and a favorite of mine, my husband and our children.

I have a lot of ripe vegetables in my garden, and I’m excited to use them to create a super tasty lasagna. You and your family might have favorite vegetables that you want to include. You really can’t go wrong, just choose what you like.

It may take a while to chop all those veggies, but you are saving time not browning ground beef. 

You can save even more time by using oven-ready lasagna noodles. These are a great option to boiling the noodles.

While this recipe calls for oven-ready lasagna noodles, feel free to use regular noodles. Boil them in a large pot of salted water for 10 minutes then drain in a colander.

It is best to rinse them under cool water to avoid the noodles sticking to each other.

You can have great-tasting, simple-to-make lasagna by using an air fryer. Many cooks have become huge fans of the air fryer, and why not? It typically cuts cooking time in half.

The air fryer allows you to create a delicious lasagna any night of the week. It’s really a game changer. Serve this with a crisp tossed salad, and a loaf of garlic bread and you have a special and satisfying meal.

We keep the ingredients simple which means you can throw it all together quickly and easily. Ground beef is back in the picture in this recipe.

We have kept the ingredients simple to cut down on preparation time, but if you prefer to use chopped onion and garlic instead of the onion and garlic powders, that will work very nicely.

You can also play with the cheeses that you use. Ricotta and mozzarella are traditional cheeses used in lasagna, but change it up if you prefer. Cheddar cheese, gruyere and parmesan are all great options.

Bechamel sauce, which is made with flour and milk, is the basis for this lasagna which bakes in a 375 F oven for 30 minutes. It’s a lovely change from our classic North American lasagna.

You will need about 4 cups of meat sauce made with ground beef. A rich meat sauce is best for this lasagna. Use your favorite recipe!

You’re probably curious about the “green” part. Green lasagna gets its name from the noodles which are made from spinach. 

This lasagna is lovely served with a loaf of rustic Italian bread. A tossed salad would round out the meal.

If you do not have time to let it thaw first, it is best to bake it at a lower temperature – 25 degrees lower than called for in the recipe – and add 30 minutes to the baking time.

You want to make sure the lasagna is fully cooked before you remove it from the oven. Put a knife into the middle, and see if it is hot. If it is still cold or lukewarm, give it more time in the oven.

  17. Remove and let sit for 10 minutes before serving.
