Cooking then freezing and then thawing and cooking can change the chemical makeup of your ingredients. Generally, the best way to make lasagna in preparation to freeze it is to use no-boil noodles. You could boil your noodles before you build the lasagna, but using boiled noodles means they could turn mushy once you reheat the dish. To play it safe, you should use no-boil noodles.
In preparation for freezing, build your lasagna like you normally would and freeze it until you are ready to eat.
How To Freeze Cooked Lasagna
Whether you have enjoyed a pan of lasagna and have leftovers you want to freeze or prefer to cook the lasagna before freezing, there are some general rules of thumb to make your frozen cooked lasagna the best possible.
The first thing to do when freezing cooked lasagna is to let it cool. Do not put a hot pan of lasagna directly into the freezer. If you don’t let the dish thoroughly cool, you allow ice crystals to freeze among the layers of your lasagna, which can cause the reheated lasagna to turn mushy.
To further prevent freezer burn, take your lasagna out of its original container it was baked in and put it in a smaller dish that it fits well into. Wrap that dish in plastic wrap and then cover that with aluminum foil.
Don’t forget to label the frozen lasagna and be prepared to reheat it and eat it within two or three months for the best results.
