Generally, the best way to make lasagna in preparation to freeze it is to use no-boil noodles. You could boil your noodles before you build the lasagna, but using boiled noodles means they could turn mushy once you reheat the dish. To play it safe, you should use no-boil noodles. 

In preparation for freezing, build your lasagna like you normally would and freeze it until you are ready to eat. 

How To Freeze Cooked Lasagna

  • 12 lasagna noodles
  • 1 pound ground beef (or 2 pounds if you prefer not to use Italian sausage) 
  • 1 egg
  • 1 pound Italian sausage
  • Olive Oil
  • 16 ounces ricotta cheese1/2 cup parmesan grated
  • 1 Small Diced Onion
  • 2 cups mozzarella shredded cheese 
  • 28 oz can of crushed tomatoes
  • 2 6.5 oz cans tomato sauce
  • 6 oz can tomato paste
  • Italian Seasoning to Taste
  • ¼ cup sugar
  • Salt and pepper to taste
  • 1 tbsp fresh basil chopped

Steps

  1. Pre-heat oven to 375 degrees F.
  2. In a saucepan, heat the olive oil and saute the diced onion. Add the ground beef and sausage once the onion is tender. Cook until the meat is browned and crumbled. Add tomato sauce, crushed tomatoes and tomato paste as well as the sugar, Italian seasoning, and basil. Let all of the ingredients simmer on low heat. 
  3. Bring water to a boil in a pot and add the lasagna noodles. Cook for 8 to 10 minutes or until noodles are al dente. 
  4. In a mixing bowl, combine ricotta cheese, parmesan cheese, and the egg. Mix together thoroughly. 
  5. Spray 9×13 inch pan with non-stick spray. 
  6. Begin building your lasagna with a cup of the meat mixture at the bottom of your dish. Place noodles on top of this mixture. Top noodles with ½ cup of the cheese/egg mixture. Repeat the layers and top with mozzarella cheese. 
  7. Cover the lasagna with aluminum foil and bake it for 20 minutes. Remove the foil at 20 minutes and then bake it again for 20 to 25 minutes or until the lasagna is heated thoroughly and is bubbling. 
  8. Let the lasagna cool for at least 15 minutes before serving.
