1. Traditional Granny Cake

For a granny cake that would literally make your grandma proud, try out a traditional granny cake recipe. It contains all its classic ingredients like pecans and pineapple, making for a tropical cake that tastes amazing. You will need: 

  • 2 eggs 
  • 20 ounces of crushed pineapple with juice
  • 2 cups of flour 
  • 1 cup of white sugar
  • 1 teaspoon of baking soda
  • 1 teaspoon of salt
  • 1 teaspoon of vanilla extract
  • ½ cup of light brown sugar
  • ½ cup of pecans

To start making your traditional granny cake, you will need to first preheat your oven. Set it to 350 degrees Fahrenheit then start mixing your ingredients in a large bowl.

Mix the eggs, undrained crushed pineapple, baking soda, salt, flour, white sugar and vanilla extract. Stir until it creates a combined mixture  – this will be your cake batter.  Pour the batter into a baking pan and set it to one side for now. 

In another bowl, add the brown sugar and chopped pecans. Mix them together and sprinkle over the top of the cake batter. Bake your granny cake for 25 or 35 minutes until the cake is dry in the center. Remove the cake from the oven and leave to cool before serving.

When serving, some people may drizzle over a hot sauce like a custard sauce or golden syrup, but you can also enjoy a slice of granny cake on its own. 

2. Vegan Granny Cake

Not everyone has a diet that allows them to eat products like eggs and butter, but for those of you who are vegan – you can still enjoy your very own granny cake by switching out the animal product ingredients for some plant-based alternatives. To make a vegan friendly granny cake, you will need:

  • 3 cups of flour
  • ⅓ cup of light brown sugar
  • ¼ cup of caster sugar
  • 1 teaspoon of baking powder
  • 1 teaspoon of mixed spice
  • ½ teaspoon of ground cinnamon
  • ½ cup of vegan butter
  • 1 cup of almond milk
  • ½ cup of pecan nuts
  • 20 ounces of crushed pineapple with juice

Before starting, remember to preheat your oven to 325 degrees Fahrenheit. Grease the base of your baking pan with vegan-friendly oil and dust with flour 

In a bowl, add the flour, brown sugar, caster sugar, baking powder and spices into a bowl and mix. Rub in the vegan butter by rubbing it between your fingers with handfuls of the mixture.

Once the mixture is crumbly like breadcrumbs, you can move on to the next step of adding the milk and undrained pineapple. Mix well to form your cake batter.

Now, you can pour the batter into the prepared baking tray and sprinkle over the pecan nuts.  Allow your cake to bake until the top is golden and springy. This can take anywhere between 40 to 50 minutes. 

Once your granny cake is cooled, serve it up! You can drizzle over some pure maple syrup to make it extra sweet or enjoy it as it is – the choice is yours. 

3. Coconut Granny Cake 

If you love the tropical tastes of pineapple and pecan nuts, then you are going to love this coconut variant of the traditional granny cake recipe!

It ramps up the sweetness but keeps the tropical theme, making a delicious cake that will remind you of sandy beaches and clear skies. To make this recipe, you will need: 

  • 1 ½ cups of sugar
  • 2 cups of flour
  • 1 teaspoon of baking soda
  • ½ teaspoon of salt
  • 2 large eggs 
  • 20 ounces of crushed pineapples with juices
  • 1 cup of light brown sugar
  • 1 cup of pecans
  • 1 cup of evaporated milk
  • 2 cups of flaked coconut 
  • ½ cup of granulated sugar (separate)
  • ½ cup of melted butter
  • 1 teaspoon of vanilla extract

Preheat your oven to 350 degrees Fahrenheit and grease your baking pan with cooking spray. 

Mix together the sugar, flour, baking soda and salt. Then add the eggs and crushed pineapples with juice. Whisk all these ingredients together until you make a well combined cake batter.

Pour the batter into the baking pan, sprinkle over the light brown sugar and pecan nuts. Then, let it bake for 40 to 45 minutes. 

While the granny cake is baking in the oven, you can make your coconut sauce. In a pan over a low heat, mix together the evaporated milk, extra sugar and butter. Bring it to the boil then stir in the flaked coconut and vanilla extract. 

Keep your coconut sauce warm until your granny cake is cooled and ready to serve. Then, drizzle some of the sauce over your slice of granny cake and tuck in! 

4. Saucy Granny Dried Fruit Mix Cake

For something extra fruit and extra saucy, try out this recipe for a different type of granny cake.

This one adds some delicious dry fruit for extra taste and texture, as well as including a small mini recipe for a sweet topping sauce! To try out this recipe, you will need to get a lot of ingredients including:

  • 2 ½ cups of mixed dried fruit 
  • 20 ounces of crushed pineapple with juice
  • 2 cups of flour 
  • 2 eggs
  • 1 cup of white sugar
  • 1 teaspoon of baking soda
  • 1 teaspoon of salt
  • 1 teaspoon of vanilla extract
  • ½ cup of light brown sugar
  • ½ cup of pecans
  • ½ cup of butter
  • ½ cup of white sugar (separate, for the topping sauce) 
  • ½ cup of evaporated milk
  • 1 teaspoon of vanilla extract (separate, for the topping sauce)

First, preheat your oven to 350 degrees Fahrenheit and grease your baking tray. 

Next, in a large mixing bowl, mix together the eggs and undrained crushed pineapple. Add the flour, dried fruit, 1 cup of white sugar, baking soda, salt, and 1 teaspoon of vanilla extract.

Add the ingredients one at a time and stir well each time. Finally, you should have your granny cake batter ready to pour into the baking pan. 

Sprinkle the brown sugar and chopped pecans over the top of the cake batter, then bake it for half an hour in the preheated oven.

Remember to test the cake before removing it from the oven by sticking a knife into the middle. The knife should pull out clean when the cake is completely done. 

Then, you can make your topping sauce. In a saucepan over a low heat, combine the butter, evaporated milk, 1 teaspoon of vanilla extract and the rest of the white sugar. Increase the heat to medium low and stir occasionally until the sugar is completely dissolved. 

Once your topping sauce is ready, you can pour it over your slices of hot granny cake and enjoy!
